Black Forest Ham Wrapped Figs with Ricotta – A Graham Elliot Recipe!

12 fresh figs
12 slices of Greenridge Farm Black Forest Ham
1 cup strained sheep’s-milk ricotta or other high-quality ricotta
2 tablespoons honey
1 teaspoon salt
1 teaspoon freshly ground black pepper
1. Wrap each fig in a slice of ham and fasten closed with a toothpick.
2. Coat a skillet with a good film of oil, about 1/4 inch deep, and heat over medium-high heat. Working in batches, sauté the wrapped figs on all sides for 2 to 3 minutes, or until the ham is crispy. As each fig is cooked, transfer to a plate lined with paper towels.
3. In a small bowl, whisk together the ricotta, honey, and sumac. Season with the salt and pepper to taste.
4. Serve the figs with the ricotta sauce.
