Chicken Pesto Sandwich

Nothing beats a warm sandwich on a cold day! The chicken pesto sandwiches are quick and easy to make and easy to eat all four without sharing!

Yield: 4


  • 8 slices Greenridge Farm Santa Fe Chicken 
  • 4 Tbsp butter
  • 8 slices sourdough bread
  • 1/4 cup pesto
  • 2 medium tomatoes sliced
  • 4 slices Greenridge Farm Swiss cheese
  • salt and pepper, to taste


  1. To assemble the sandwiches butter one side of each bread. Place the side that is buttered down and top the non buttered side with 2 slices of Santa Fe Chicken, 1 slice of cheese and 3 tomato slices.
  2. Take another piece of buttered bread and on the non buttered side spread the pesto over it. With the pesto side down, place the second piece of bread on top of the tomato slices.
  3. Repeat steps one and two until all sandwiches have been assembled.
  4. Cook the sandwiches in a large skillet (can cook two at a time) over medium heat. Cook until both sides are golden brown and cheese is melted.
  5. Enjoy!
