Chicken Sausage Broccoli Cheddar Soup

When it gets chilly out, cozy up with this toasty dinner idea.


4 cups broccoli florets
1 small white onion diced
1.5 cups shredded carrots
4 cups chicken stock
1/8 teaspoon nutmeg
Salt and black pepper to taste
3 tablespoons unsalted butter
1/3 cup all purpose flour
1 cup half and half or milk of choice
1 package Greenridge Farm Black Forest Chicken Sausage, sliced
1 package Greenridge Farm Mild Cheddar Cheese, chopped


1. In a crock pot combine broccoli, carrots, onion, chicken stock and seasonings. Cook on low for 3.5 hours.
2. Stir in the chicken sausage and cook in the crock pot another 15-20 minutes on high.
3. Meanwhile, melt the butter in a non-stick skillet on medium heat. Gradually whisk in the flour. Take about 1 cup of liquid from the crock pot and gradually whisk that into the flour mixture on low heat.
4. Slowly whisk in the half and half. Next gradually whisk in the cheese until it’s melted. Add the cheese sauce to the crock pot and store until combined.
