Cucumber Avocado Roll Ups



  • 2 large english cucumbers

  • 6 slices, Greenridge Farm Blackforest Ham (or any GRF ham)

  • 1.5 avocados

  • 1 small lime

  • Salt and pepper to taste (or your favorite seasoning)

  • 6 slices Greenridge Farm Provolone Cheese (or any GRF cheese)

  • 4 slices Greenridge Farm Oven Roasted Chicken Breast (or any GRF Chicken Breast)



  • Slice cucumbers using a mandolin on the thickest setting. *You will need 6 slices of equal length. There will be leftover cucumber.

  • Pat cucumbers dry on a paper towel. Line them up closely on a piece of parchment paper. Trim any excess pieces of cucumber to ensure they are all the same length (about, 9-10”).

  • Lay ham over the cucumbers in 2 rows of 3 pieces.

  • In a small bowl, mash the avocado with a fork. Squeeze lime juice into the bowl and mix to keep from browning. Add salt and pepper to taste and mix.

  • Using an offset spatula spread the avocado over the ham in an even layer.

  • Lay the cheese over the cucumbers in 2 rows of 3 pieces.

  • Lay the chicken over the cheese in 2 rows of 2 pieces.

  • Tightly begin to roll horizontally, using the parchment to keep everything together.

  • Once you have a long, tight cylinder shape, gently pull the parchment away.

  • Slice between each cucumber into 6 even pieces. Serve right away or store in an airtight container in the refrigerator for up to 24 hours.
