Directions:

  1. Preheat oven to 375 degrees F.
  2. Lightly grease four mini tart pans, set aside.
  3. Whisk together the eggs, half and half, salt and pepper until blended.
  4. Add both of the cheese and the ham.
  5. Microwave this mixture for 30 seconds on high. Remove and stir, place in the microwave again for 30 sec.
  6. Repeat step five until the eggs start to look scrambled.
  7. Lightly dust the puff pastry with flour and gently roll out until you are able to cut it into four pieces that will cover and go over the mini tart pans.
  8. Place the dough into the tart pans and add the egg mixture.
  9. Fold the corners of the dough over the eggs and brush the butter over the dough.
  10. Bake for 25 to 30 min or until pastry is golden brown and the eggs are puffed.
  11. Remove from oven and cool, remove the soufflés from the mini tart pan and serve hot.
  12. Serve and Enjoy!
