Strawberry & Sausage Salad

This recipe is the definition of summer, with the help of seasonal fruits & veggies it is a no brainer that this salad is a go to on those hot days! Try our Spinach and Feta Chicken Sausages sprinkled on top for a great protein kick that the family will love!!

For the dressing:

  • 1/4 cup pesto
  • 2 Tbsp olive oil
  • 1/4 greek yogurt
  • 2 Tbsp apple cider vinager
  • 1 Tbsp garlic salt
  • 2 Tbsp water


For the dressing:

  1.  Combine all salad dressing ingredients into a bowl, stir until evenly combined. Cover and keep refrigerated.

For the salad:

  1.  In a large frying pan add the Greenridge Farm Spinach & Feta Chicken Sausages, cook until the sausages are golden brown in color and heated all the way through, about 10 mins.
  2. Place the washed fresh mixed greens in a bowl.
  3. Top the greens with the sliced strawberries, avocado, feta, sausage and almonds.
  4. Remove the dressing from the refrigerator and pour desired amount over the salad.
  5. Serve immediately and enjoy!!
